Fortunately, I did find a few shops that could get me enough quantity (8 rolls, that's it!) of my preferred film with the color and saturation that I was going for.  The black and white, though, I had to slightly compromise (couldn't find Tri-X), and I slightly adjusted a few frames because of it.  Digital has completely taken over in Hong Kong, film is effectively gone.
